Sheer Khurma Recipe | Breakfast Care

Sheer Khurma is a traditional dessert that is a must-make for the festival of Eid or Iftari. Sheer Khurma is also known by the name "Sheer Korma" and "Vermicelli Pudding".
This delicacy is made by cooking fine vermicelli with ghee, milk, dates, and nuts. Saffron is added to it for a unique flavor.

  • cup vermicelli, broken
  • liter milk
  • 2 tablespoons ghee 30 ml
  • 10-15 cashew, broken
  • 10-12 almonds, chopped
  • 10-12 pistachios, chopped
  • 10-15 raisins
  • 10 dates
  • 1/2 teaspoon cardamom powder
  • Sugar, as per taste

  • In a pan, heat ghee over medium flame.
  • Once hot, add the chopped nuts, raisins and dates to the pan and cook until the nuts are fragrant and turn golden brown.
  • Remove the nuts from the pan and set them aside.
  • In the same pan, add vermicelli and mix well.
  • Roast the vermicelli until it starts becoming a light golden brown in color or for 3-4 minutes.
  • Now, add the milk to the pan and stir well.
  • Increase the flame to medium high and let the milk come to a boil.
  • Stir often in between so that vermicelli doesn't stick to the bottom of the pan.
  • Once the milk comes to a boil, lower the heat to medium and let is boil for around 10 minutes.
  • After 10 minutes, the milk will reduce and thicken slightly, at this point add in the sugar and mix.
  • Transfer back the fried nuts into the pan and mix.
  • Add cardamom powder and mix well and cook for 2-3 more minutes on medium-low heat.
  • Now turn off the flame.
  • Serve Sheer Khurma hot.
