Huevos Rancheros Recipe | Breakfast Care

Huevos rancheros is a breakfast dish consisting of eggs served in the style of the traditional large mid-morning fare on rural Mexican farms. It is a vegetarian Mexican breakfast.

  • 2 (15 oz) cansblack beans, drained and rinsed
  • 2 eggs
  • corn tortillas
  • 1.5 cups salsa
  • Cotija cheese
  • Cilantro
  • Avocado
  • Hot sauce
  • 1/2 teaspoon salt

  1. In a medium sized skillet add black beans, 1 1/2 cups salsa and salt.
  2. Stir mixture and bring to a simmer. Continue to cook for about 4-5 minutes or until most of the liquid has absorbed.
  3. In a dry skillet set over medium heat, warm each tortilla until soft and edges begin to brown.
  4. On a plate add tortillas, top with 1 cup of the bean mixture and a fried egg.
  5. Garnish with additional salsa, cotija cheese, cilantro, avocado, and hot sauce if desired.
  6. Continue with the remaining servings.
  7. Serve warm and enjoy!
