Cucumber Mint Raita Recipe | Breakfast Care

Cucumber Mint Raita is really quick and easy dip which takes minutes to prepare. Cucumber and mint raita is a yogurt based Indian dip that can be prepared with ingredients right from your refrigerator.


Ingredients
  • 1 cup cucumber, shredded

  • 2 cup yogurt

  • 10 large mint leaves, thinly sliced

  • 1/2 teaspoon cumin powder

  • Salt and pepper, as per taste

  • Some pomegranate, to garnish


Instructions
 Place shredded cucumber in a sieve and press with the back of a spoon to squeeze out as much moisture as you can.
• Alternatively, you can place the grated cucumber in the middle of a clean tea towel, wrap the towel around the cucumber and wring out the excess moisture.
• Stir spices and mint into yogurt in a medium bowl.
Stir in the grated cucumber. 
Garnish with pomegranate seeds and some mint leaves.
Serve chilled.
