Bruschetta is a classic Italian appetizer that is easy to make at home. Toasted bread is topped with tomatoes, Parmesan cheese, garlic, and fresh basil.
Ingredients
- 1 loaf hearty french bread, sliced into 1/2-inch thick slices (about 10 slices)
- 6-8 Roma tomatoes, diced
- 1.5 tablespoon fresh garlic, minced
- 1/4 cup parmesan cheese, finely shredded
- 1/4 cup chopped basil ribbons
- 1/4 cup extra virgin olive oil
- Balsamic vinegar, as per taste
- Kosher salt, as per taste
- Ground black pepper, as per taste
Instructions
- In a small skillet, heat olive oil over medium-low heat.
- Add garlic and saute until just starting to turn golden.
- Pour into a large mixing bowl and let down to cool.
- Pour tomatoes into bowl with cooled oil mixture.
- Add parmesan, basil, balsamic vinegar, salt and pepper.
- Toss mixture very well.
- Serve over toasted bread.
- Now, position oven rack a few inches below broil and preheat broiler.
- Align bread slices on an 18/13-inch baking sheet.
- Broil first side until golden brown, about 1 minute.
- Flip slices to opposite side and broil opposite side until golden brown.
