Breakfast Salad With Eggs is a healthy and easy to cook recipe. It is a breakfast that gets me sprinting out of bed.

  • 2 eggs
  • teaspoons olive oil
  • 1/2 red onion, chopped
  • 1/3 avocadosliced
  • 2 -3 cups baby greensspinach, kale or your favorite green
  • 1/2 cup roasted cauliflower
  • Microgreens
  • Salt, as per taste
  • Pepper, as per taste

  • In a pan, heat 2 teaspoons oil over medium heat.
  • Add onion and sauté for about 5 minutes, once the oil is hot.
  • Add greens and roasted cauliflower and toss to combine.
  • Now, sprinkle with sea salt.
  • Stir and cook until greens begin to wilt.
  • Transfer veggies to a salad bowl and then crack two eggs into the same pan.
  • Cook eggs to desired consistency.
  • Sprinkle with salt and pepper and place on top of sautéed greens.
  • Top bowl with microgreens and sliced avocado.
  • Serve and enjoy your salad!
