Creamy Cashew Tomato Pasta is a delicious and easy to cook recipe. As the name says it’s made with a creamy cashew pasta sauce, tomato, and fresh basil. It's a perfect option for dinner.
Ingredients
- 1 lb gluten free pasta (any pasta of your choice)
- 1 can tomatoes, chopped into halves
- 1 cup raw cashews
- 2 tablespoons nutritional yeast
- 1 tablespoon dried oregano
- 2 teaspoons garlic, minced
- Vegan parmesan, for topping
- Fresh basil for topping, optional
- 1 teaspoon salt
Instructions
- Bring a large pot of salted water to a boil over a high heat.
- Add the pasta and cook according to package instructions.
- Once cooked, drain the pasta water and return the pasta back to the pot.
- While the pasta is cooking, add the tomatoes, cashews, nutritional yeast, oregano, garlic and salt to a blender and blend on high 2-3 minutes until smooth.
- Stir the blended cashew sauce into the pot along with the drained pasta.
- Stir until well combined.
- Serve hot with fresh basil.
- Enjoy!
