Creamy Cashew Tomato Pasta is a delicious and easy to cook recipe. As the name says it’s made with a creamy cashew pasta sauce, tomato, and fresh basil. It's a perfect option for dinner.

  • 1 lb gluten free pasta (any pasta of your choice)
  • 1 can tomatoes, chopped into halves
  • 1 cup raw cashews
  • 2 tablespoons nutritional yeast
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic, minced
  • Vegan parmesan, for topping
  • Fresh basil for topping, optional
  • 1 teaspoon salt

  1. Bring a large pot of salted water to a boil over a high heat.
  2. Add the pasta and cook according to package instructions.
  3. Once cooked, drain the pasta water and return the pasta back to the pot.
  4. While the pasta is cooking, add the tomatoes, cashews, nutritional yeast, oregano, garlic and salt to a blender and blend on high 2-3 minutes until smooth.
  5. Stir the blended cashew sauce into the pot along with the drained pasta.
  6. Stir until well combined.
  7. Serve hot with fresh basil.
  8. Enjoy!
