Gatte Ki Sabzi is one of the popular and delicious gravy baseD dish from Rajasthani cuisine. It is prepared by using gram flour dumplings and best served with chapatis or any Indian bread.
Ingredients
FOR GATTE:
- 1 cup besan / gram flour
- ½ teadpoon coriander seeds, crushed
- ¼ teaspoon ajwain / carom seeds
- ¼ teaspoon turmeric
- ¼ teaspoon kashmiri red chilli powder
- A pinch hing / asafoetida
- 2 tablespoons ghee
- 2 tablespoons curd
- 2 tablespoons water
- Salt, as per taste
FOR SABZI:
- 1 teaspoon cumin / jeera
- 1 teaspoon kasuri methi / dry fenugreek leaves
- 1 bay leaf / tej patta
- ½ teaspoon fennel / saunf
- A pinch hing / asafoetida
- 1 onion, finely chopped
- 1 teaspoon ginger garlic paste
- ¼ teaspoon turmeric
- 1 teaspoon kashmiri red chilli powder
- ½ teaspoon coriander powder
- ¼ teaspoon cumin powder / jeera powder
- 1 cup curd
- 2 tbsp coriander, finely chopped
- 2 tablespoons oil
- 1/2 teaspoon salt
Instructions
- In a large kadai heat oil and saute spices.
- Add 1 onion, ginger garlic paste. Saute until golden brown.
- Add spices and saute well on low flame.
- Add 1 cup water and 1 cup curd.
- Stir continuously until the mixture comes to a boil.
- Add prepare gatte and ½ tsp salt.
- Mix very well.
- Cover and boil for 5 minutes.
- Add ¼ teaspoon garam masala and 2 tablespoon coriander. Mix well.
- Serve gatte ki sabji with roti or any Indian bread.
