Cheesy Egg Boat Recipe | Breakfast Care

Cheesy Egg Boats is a easy and delicious recipe. It's a perfect dish for brunch.

4 eggs
• large shallow loaf of bread, sliced in half
• 4 lb. strips bacon
• 1 oz. block cream cheese, softened
• 2 c. shredded mozzarella
• 1 c. freshly grated Parmesan
• 4 tablespoons butter, melted
• 1 teaspoon garlic powder
A handful of spring onions, chopped
Ground black pepper, as per taste
Salt, as per taste


  1. Preheat oven to 400°.
  2. Slice off top of bread, about an 1” deep.
  3. Hollow out center and tear bread into large pieces.
  4. Place hollowed out loaf in a 9”-x-13” baking pan.
  5. In a large skillet over medium heat, cook bacon until crispy, 6 minutes. 
  6. Transfer to a paper towel-lined plate to cool then chop into 1” pieces.
  7. In a medium bowl, combine cream cheese, mozzarella, and Parmesan. 
  8. Season with salt and pepper. 
  9. Spread cheese mixture in bread cavity then spread spinach and bacon on top. 
  10. Crack eggs on top of bread and season with salt, pepper, and a pinch of red pepper flakes. 
  11. In a medium bowl toss torn out bread with butter and garlic powder.
  12. Spread bread around loaf in baking pan. 
  13. Bake until egg whites are just set and bread is toasted.
  14. Use toasted bread to dip into bread boat.
  15. Sprinkle with chopped spring onions.
  16. Serve immediately.
