Aloo Shimla Mirch/ Potato Capsicum Recipe | Breakfast Care

Aloo Shimla Mirch is a simple and easy to cook Indian vegetable dish. It is served with hot chapatis/ fulka.

  • 2 potatoes, cut into pieces
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 onion, diced
  • 1 inch ginger, grated
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon garam masala powder
  • Oil
  • Salt, as per taste

  1. Boil the potatoes in the pressure cooker for 3 whistles and turn off the heat.

  2. Peel and dice the potatoes and keep aside. Allow them to cool completely.

  3. Heat oil in a pan.

  4. Add the ginger, onions and bell peppers.

  5. Saute for a few minutes until capsicum would be lightly browned around the edges and softened too. 

  6. Stir in the boiled potatoes, turmeric powder, coriander powder and garam masala powder, red chilli powder and salt.

  7. Stir the vegetable along with the spices until well coated with the spices.

  8. Cover the pan.

  9. Turn the heat to low and simmer for about 5 minutes, stirring occasionally.

  10. Turn off the heat.

  11. Serve hot Aloo Simla Mirch with hot chapatis.

  12. Enjoy!

You can avoid red and yellow bell pepper, if don't like.
