Soya Chunks Curry is a delicious side dish. It is best served with chapati, roti, nan, and pulao.
Ingredients
- 1.5 cups soya chunks
- 2 potatoes, cut into cubes
- 1 large onion roughly chopped
- 2 green chilli, chopped
- 4 cloves of garlic, minced
- 1 inch ginger piece, chopped
- 1 large tomato roughly chopped
- 1/2 teaspoon cumin seeds
- 1/2 tablespoon coriander powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon turmeric powder
- 3 cups water
- 1 tablespoon oil
- A handful of coriander leaves, chopped
- Salt, as per taste
Instructions
- Wash the soya chunks and soak in boiling water for around 10-15 minutes.
- After 15 minutes, squeeze out all the water from the chunks and keep aside.
- In a grinder, make a paste of onion, ginger, and garlic. Take out the paste. Keep aside.
- In the same jar make a paste of tomato and green chilies.
- Heat oil in a pot and add cumin seeds and let them crackle.
- Add the onion paste and fry till it turns golden brown.
- Add turmeric powder, salt, and coriander powder and about 2 tablespoons of water.
- Stir fry for about a minute and then add the tomatoes.
- Cook the tomatoes nicely until turn mushy.
- Add potato cubes and soya chunks. Mix everything well and cook for about 2 minutes.
- Add water, mix and cover the pot.
- Cook till potatoes are cooked well.
- Add garam masala, mix and simmer for around 2 minutes.
- Remove from the heat.
- Garnish with chopped coriander leaves.
- Serve hot with chapati, rice or paratha.
