Lemon Bread Recipe | Breakfast Care

Lemon Bread  is packed with lemon flavor, easy to make and perfect for breakfast.

  • 1.5 cups all-purpose flour
  •  4 eggs
  • 1 cup Greek yogurt
  •  1 cup granulated sugar
  • 2 teaspoon baking powder
  •  2 tablespoons lemon zest
  •  1-2 tablespoons lemon extract
  • 1/2 cup oil
  •  Salt, as per taste

1. Preheat oven to 350F.
2. Grease and flour a 9×5-inch loaf pan.
3. In a bowl, add the eggs, sugar, yoghurt, and whisk vigorously until smooth and combined.
4. Drizzle in the oil while whisking to combine.
5. Add the lemon zest, lemon extract, and whisk to combine.
6. Add the flour, baking powder, salt, and stir until just combined, don’t overmix.
7. Pour the batter into prepared pan, smoothing the top lightly with a spatula.
8. Bake until top is domed, set, and toothpick inserted in the center crack comes out clean or with a few moist crumbs but no batter or for 1 hour.
9. Transfer the bread to a cooling rack for at least 30 minutes and serve.
