Italian Vegetable Rice is one of the delicious and easiest rice recipes that make for a wholesome meal.
Ingredients
- 1 cup basmati rice, soaked
- 2 cups vegetable stock
- 1/2 cup carrots, diced
- 1/2 cup french beans, cut in length
- 1/2 cup baby corn
- 2-3 cloves
- 1/2 cup broccoli florets
- 2 tablespoons italian seasonings
- 1/2 teaspoon basil
- 1/2 teaspoon red chilli powder
- 1/2 tablespoon garlic, chopped
- 1 onion, chopped
- 2 tablespoons oil
- Salt & pepper, as per taste
Instructions
- Heat oil in a pan.
- Add garlic and onion. Saute until aromatic and translucent.
- Add basil and vegetables. Saute for 5 minutes.
- Add vegetable stock, Italian seasoning, spices and basmati rice.
- Cover the pan and cook on low heat until all the water is absorbed and rice is cooked.
- Put the lid on and let it rest for 5 minutes.
- Serve immediately.
