Italian Vegetable Rice Recipe | Breakfast Care

Italian Vegetable Rice is one of the delicious and easiest rice recipes that make for a wholesome meal. 


Ingredients
  • 1 cup basmati rice, soaked
  • 2 cups vegetable stock
  • 1/2 cup carrots, diced
  • 1/2 cup french beans, cut in length
  • 1/2 cup baby corn
  • 2-3 cloves
  • 1/2 cup broccoli florets
  • 2 tablespoons italian seasonings
  • 1/2 teaspoon basil
  • 1/2 teaspoon red chilli powder
  • 1/2 tablespoon garlic, chopped
  • 1 onion, chopped
  • 2 tablespoons oil
  • Salt & pepper, as per taste

Instructions
  • Heat oil in a pan.
  • Add garlic and onion. Saute until aromatic and translucent.
  • Add basil and vegetables. Saute for 5 minutes.
  • Add vegetable stock, Italian seasoning, spices and basmati rice.
  • Cover the pan and cook on low heat until all the water is absorbed and rice is cooked.
  • Put the lid on and let it rest for 5 minutes.
  • Serve immediately.
