Chicken Stir Fry Rice Noodles is a quick and easy to make recipe. It is healthy, delicious and a wholesome meal.
Ingredients
- 180 gram chicken breast , cut into cubes
- 3 tablespoons stir fry sauce
- 100 gram dried rice noodles
- 1 garlic clove , finely chopped
- 1 onion, sliced
- 1/2 red capsicum, sliced
- 1/2 green capsicum, sliced
- 1/2 bunch choy sum
- 2 tablespoons oil
- Water
- Salt, as per taste
Instructions
- In a bowl, mix chicken and oil well.
- Soak noodles in hot water per packet directions.
- Drain the noodles.
- Heat oil in a wok over high heat.
- Add garlic and onion, saute until aromatic.
- Add chicken, cook until it changes colour from pink to white or for 2 minutes.
- Add choy sum stems and capsicum. Cook for a minute.
- Add noodles, choy sum leaves, salt and homemade stir fry sauce. Toss until leaves have wilted and sauce has evaporated.
- Transfer to the serving dish.
- Serve hot.
