Cherry Farro Salad Recipe | Breakfast Care

Cherry Farro Salad is a delicious, nutritious and perfect salad for summer.

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

1. In a pan, combine farro, water and salt and boil over high heat.

2. Cover and cook until the farro is tender, 20 to 30 minutes.

3. Drain remaining liquid and fluff with a fork.

4. Spread the farro out on a large rimmed baking sheet to cool.

5. In a bowl, whisk vinegar, oil and the remaining salt.

6. Add cherries,  feta cheese, almonds, onion, mint and the farro.

7. Gently stir to combine and serve.

8. Enjoy!
