Blueberry Pie Recipe | Breakfast Care

Blueberry Pie is a delicious and easy to make recipe. It's packed with flavour of blueberries and is the perfect dessert for summer. 

  • 5 tablespoons all-purpose flour
  • 1 egg
  • 2 pie crusts
  • 6 cups blueberries
  • 1/2 cup sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1 tablespoon water

  1. Make 2 pie crust and let it refrigerate 1 hour in refrigerator before using.
  2. Roll the first disk into a 13" circle and transfer to a 9" wide pie pan.
  3. Roll the second crust into a 12" circle and use a pizza cutter to slice into ten 1-inch strips.
  4. Combine blueberries, lemon zest, lemon juice, granulated sugar, flour, cinnamon in a large bowl. Toss to combine.
  5. Transfer blueberries into the dough-lined pie pan, mounding it just slightly in the center and keeping the edges clean of blueberry juice.
  6. Create a lattice crust over the top, using the 10 strips of dough.
  7. Pinch the edges to seal.
  8. Beat together 1 egg and 1 tablespoons water and brush the egg wash over the lattice crust and edges.
  9. Heat the oven at 375 degrees.
  10. Bake until blueberry juice is bubbling at the edges and crust is golden.
  11. Transfer the blueberry pie to the cooling rack.
  12. Serve immediately.
