Roasted Vegetable Tacos Recipe | Breakfast Care

Roasted Vegetable Tacos is the Mexican food. It is best served as breakfast and snacks. It is easy to make recipe with your favourite toppings and delicious flavour.


Ingredients
  • 4 tortillas
  • 1/2 cup sweet potatoes
  • 1/2 cup cauliflower
  • 1/2 cup tofu, cubed
  • 1/2 cup black beans
  • 1 yellow onion, chopped
  • 1 teaspoon red bell pepper
  • 1 teaspoon cumin
  • 1 teaspoon red chilli powder
  • A handful of cilantro leaves, chopped
  • 2 teaspoon lime juice
  • Avocado slices
  • Lemon wedges
  • Jalapenos, sliced
  • Salt & pepper, as per taste
  • 1/2 cup creamy cilantro dressing

Instructions
  • Chopped the veggies and place on roasting sheet, along with cubed tofu.
  • Drizzle with oil and sprinkle with spices. Toss to combine. Roast for 20 minutes, stirring the veggies halfway through.
  • Once roasted, add the black beans, lime juice and cilantro to the pan and stir.
  • Place veggie taco filling in the centre of tortillas.
  • Top with jalapenos and avocado slices.
  • Garnish with creamy cilantro dressing, cilantro leaves and lemon wedges, and serve.
  • Enjoy!

Note
1. You can add toppings and vegetables of your choice.
2. Dice all the veggies in same size, so they will cook evenly.
