Mirchi Vada is one of the popular snack from Rajasthani cusine. They are also known as Chili Cutlet.
Ingredients
• 2 potatoes, boiled & mashed
• 10 chilli, (bhavnagiri / jalapeno)
• 1 cup gram flour/ besan
• 2 tablespoon rice flour
• 1/4 teaspoon baking soda
• 1 chilli, finely chopped
• 1/2 teaspoon ginger paste
• 1/2 teaspoon coriander seeds
• 3/4 teaspoon red chilli powder
• 1 teaspoon turmeric powder
• 1 teaspoon salt
• 1/2 teaspoon chaat masala
• A pinch of hing
• A handful of coriander leaves, finely chopped
• Oil, for frying
• 1 cup water
Instructions
- In a bowl, take 2 boiled and mashed potato.
- Add coriander seeds, chilli, ginger paste, chilli powder, pinch hing, coriander leaves and salt. Mix well together.
- Stuff the prepared aloo masala into the chilli.
- Dip the stuffed mirchi into besan batter and coat completely.
- Heat oil in a wok.
- Deep fry in hot oil over medium flame.
- Cook and flip until turns golden.
- Drain off the mirchi vada over kitchen paper towel.
- Serve hot with tamarind chutney or ketchup.

You can enjoy mirchi vada with any dip of your choice.
