I haven't grown up eating this rustic dish but I make it best. Litti Chokha is a dish that is very simple yet super delicious. It is a complete meal originating from Bihar and popular in many regions of India, such as Jharkhand and parts of Eastern Uttar Pradesh.
Ingredients
For Litti:
- 2 cups wheat flour
- 2 tablespoons ghee
- 1/8 teaspoon baking soda
- 1/2 teaspoon salt
For Stuffing:
- 1 cup sattu
- 1 teaspoon ginger, grated
- 2 green chilli, finely chopped
- 1 teaspoon red chilli powder
- 1 tablespoon lime juice
- A handful of coriander leaves, chopped
- 1 tablespoon oil
- Salt, as per taste
For Chokha:
- 1 brinjal
- 2 tomatoes
- 1/2 cup onion, chopped
- 2 green chilli, chopped
- 2 teaspoon lime juice
- A handful of coriander leaves, chopped
- 3 tablespoon oil
- Salt, as per taste
Instructions
For Litti:
- In a bowl, add whole wheat flour, salt, ghee and cooking soda. Mix well together.
- Add water and knead to make a medium soft dough. Cover the dough for 30 minutes.
For Filling:
- In a bowl, add all the ingredients and mix well.
- Add some more oil if the filling is too dry.
For Assembling Litti:
- Take out a large lemon sized dough and make it into a ball. Roll the dough ball to make a 4-5 inch circle.
- Place 2 tablespoons of filling in the centre of the dough and bring the ends together.
- Seal the ends by moistening with water.
- Repeat the process to make more litti. Keep the litti covered with a cloth.
- Pre heat an oven to 180 degrees C.
- Bake for 20-25 minutes until browned from the top.
- Flip the litti upside down and bake for another 10-12 minutes or until browned.
- Dip the litti in ghee and serve with chokha.
For Chokha:
- Roast the brinjal and tomatoes over direct flame.
- Place them on a plate and let cool. Remove the skin of the brinjal and tomatoes.
- Mash them well. Add all the remaining ingredients and mix well.
- Serve hot with litti.
