Gluten Free Pizza With Spiced Mango Sauce Recipe | Breakfast Care

Gluten Free Pizza With Spiced Mango Sauce is healthy, delicious and perfect brunch or snack idea. This simple yet healthy recipe satisfy every craving.


Ingredients
For The Gluten Free Pizza Base:
• 400g gluten-free bread flour
1 teaspoon baking powder
• 2 teaspoon caster sugar
• 4 tablespoon oil
Warm water
1 teaspoon salt

For The Sauce:
• 1 ripe mango, mashed
• 1 teaspoon cumin seeds
• 2 tablespoon oil
• 1 teaspoon red chilli powder
• 1 teaspoon ginger, crushed
• 1 teaspoon caster sugar
• Salt, as per taste

For The Toppings:
• 1 red onion, thinly sliced
• 1 tomatoe, thinly sliced
• 1/2 capsicum, thinly sliced
• 1/2 cup mozzarella cheese
• 1/2 cup cottage cheese, crumbled


Instructions

Preheat the oven to 220°C and put baking sheet inside.

For The Mango Sauce:
1. Heat the oil in a small pan.
2. Cook the onion with a pinch of salt for 10 mins over a low heat until softened. 
3. Add the chopped tomatoes, cumin seeds, crushed ginger, red chilli powder, and sugar and bring to a gentle simmer. Cook for 20 minutes or until reduced and thick.
4. Add mashed mango and blitz the sauce with a hand blender until smooth.
5. Allow the sauce to cool down.

For The Dough:
1. In a bowl, mix the flour, sugar, baking powder and salt.
2. Pour in warm water and the oil. Combine quickly with your hands, to create a thick, wet, paste-like texture, adding an extra 20ml warm water if the dough feels a little dry.
3. Keep the dough in a covered bowl in the fridge for atleast 1 hour before using. 
4. Lightly flour two more baking sheets.
5. Split the dough into two and flatten into 20 - 25cm rounds on the sheets.

Assemble The Pizza:
1. Finish the bases with a thin layer of the spiced mango sauce.
2. Spread torn up mozzarella.
3. Add the veggies, cottage cheese and mozzarella.
4. Place the baking sheets on top of the hot baking sheets in the oven and cook for 10 mins or until crisp around the edges.
5.  Remove from oven and cut into slices.
6. Serve warm.
