Veg Poha Cutlets is an easy, light and healthy breakfast and evening snacks recipe. It is made from beaten rice and potatoes and can be a very good veg starter for parties.
Ingredients
- 1 cup poha
- 2 potatoes, boiled & mashed
- 1/4 cup carrot, grated
- 1/4 cup peas, boiled
- 2 tablespoons onion, finely chopped
- A handful of coriander leaves, chopped
- 1/3 cup breadcrumbs
- 1 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- 3 tablespoons cornflour
- Water
- Oil
- Salt, as per taste
Instructions
- In a bowl, soak poha for 2 mins, rinse well and drain water.
- Transfer to a mixing bowl. Add boiled mashed potatoes, onion, boiled peas, carrot along with turmeric powder, red chilli powder,coriander leaves and salt. Mix well together.
- Sprinkle little water if mixture is too dry.
- Make a dough of the mixture.
- Make medium sized balls and flatten them.
- Repeat the process to make more patties.
- In a seperate bowl, add cornflour,salt and little water.
- Mix well to form a slightly thin paste, should be in flowing consistency.
- Take a pattie, add it to the cornflour mixture flip over so that its evenly coated, add it immediately to breadcrumbs on both sides.
- Heat oil in a pan.
- Deep fry until golden brown.
- Flip over and cook until it has crisp edges.
- Serve hot.

Note
It tastes best with tomato ketchup and green chutney.
