Flattened Rice Cutlets/ Veg Poha Cutlets Recipe | Breakfast Care

Veg Poha Cutlets is an easy, light and healthy breakfast and evening snacks recipe. It is made from beaten rice and potatoes and can be a very good veg starter for parties.

  • 1 cup poha
  • 2 potatoes, boiled & mashed
  • 1/4 cup carrot, grated
  • 1/4 cup peas, boiled
  • 2 tablespoons onion, finely chopped
  • A handful of coriander leaves, chopped
  • 1/3 cup breadcrumbs
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 3 tablespoons cornflour
  • Water
  • Oil
  • Salt, as per taste

  • In a bowl, soak poha for 2 mins, rinse well and drain water.
  • Transfer to a mixing bowl. Add boiled mashed potatoes, onion, boiled peas, carrot along with turmeric powder, red chilli powder,coriander leaves and salt. Mix well together.
  • Sprinkle little water if mixture is too dry.
  • Make a dough of the mixture.
  • Make medium sized balls and flatten them.
  • Repeat the process to make more patties.
  • In a seperate bowl, add cornflour,salt and little water.
  • Mix well to form a slightly thin paste, should be in flowing consistency.
  • Take a pattie, add it to the cornflour mixture flip over so that its evenly coated, add it immediately to breadcrumbs on both sides.
  • Heat oil in a pan.
  • Deep fry until golden brown.
  • Flip over and cook until it has crisp edges.
  • Serve hot.
  • Enjoy!

It tastes best with tomato ketchup and green chutney.
