So, Egg Salad is the perfect brekfast and brunch idea. It's simple, easy, healthy and versatile recipe.

  • eggs
  • 1/4 cup celery, dice
  • 1 tablespoon red onionminced
  • A handful of scallions, chopped
  • 2 teaspoon lemon juice
  • 1/2 cup mayonnaise
  • 2 cups water
  • Salt & pepper, as per taste

  • In a pot, place eggs and fill enough water that will cover the eggs by 1-inch. 
  • Let them boil at 200°F for 30 seconds. 
  • Place the lid on the pot and reduce heat to low. Cook eggs on a low simmer for 12 minutes.
  • Once the eggs are done cooking immediately transfer them to a bowl and cool down.
  • Peel the eggs and chop the hard-boiled eggs.
  • In a bowl, combine chopped eggs, mayonnaise, lemon juice, celery, red onion, scallions, salt, and pepper. Mix them well together.
  • Garnish with chopped scallions and serve.
  • Enjoy!
