Egg Fried Rice Recipe | Breakfast Care

Egg Fried Rice is one of the easiest and most satisfying recipe. It is a great way to use up leftover rice. 

  • 4 eggs, whisked lightly
  • 4 cups cooked rice
  • 1 onion, diced
  • 1/2 cup frozen peas
  • 2 tablespoons butter
  • 1/2 tablespoon soy sauce
  • 2 tablespoons oil
  • Scallions, to garnish
  • Salt and pepper, as per taste

  • Heat oil in a wok. Whisk in the eggs and cook until set.
  • Add another tablespoon of oil to the wok.
  • Add onion and cook until translucent.
  • Add frozen peas with a pinch of salt, and cook until heated through.
  • Melt butter in a skillet.
  • Add cooked rice and stir to combine with the peas.
  • Press down into the pan to brown the rice lightly for a couple of minutes.
  • Return the egg to the skillet and stir to heat through.
  • Remove from heat, then stir a little soy sauce.
  • Garnish with scallions and serve.
  • Enjoy!

1. Store leftovers in a tightly sealed container for up to 3 days.
2. You can add more veggies of your choice.
