Cauliflower Potato Salad Recipe | Breakfast Care

Cauliflower Potato Salad is the low carb side dish. It is healthy and perfect summer dish.


Ingredients
  • 1 head cauliflower
  • 3 eggs
  • 1/2 cup yogurt
  • 3 stalks celery, diced
  • 1/2 red onion, diced
  • 1 clove garlic, crushed
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons dill, chopped
  • 2 teaspoon lemon juice
  • 2 tablespoons oil
  • Salt and pepper, as per taste

Instructions
  1. Preheat oven to 400˚F.
  2. Slice cauliflower into small florets. Season with salt, pepper and oil and place cauliflower onto baking sheet.
  3. Bake in preheated oven until lightly browned and a bit crispy.
  4. In a large bowl, combine all dressing ingredients. Set aside.
  5. Once cauliflower is cooked, set aside and let cool slightly.
  6. Dice eggs, onion and celery.
  7. In a bowl, combine cauliflower, eggs, onion, celery and dressing.
  8. Garnish with chopped dill and serve.
  9. Enjoy!
