Cauliflower Potato Salad is the low carb side dish. It is healthy and perfect summer dish.
Ingredients
- 1 head cauliflower
- 3 eggs
- 1/2 cup yogurt
- 3 stalks celery, diced
- 1/2 red onion, diced
1 clove garlic, crushed 1 tablespoon dijon mustard 1 tablespoon honey 2 tablespoons dill, chopped - 2 teaspoon lemon juice
- 2 tablespoons oil
- Salt and pepper, as per taste
Instructions
- Preheat oven to 400˚F.
- Slice cauliflower into small florets. Season with salt, pepper and oil and place cauliflower onto baking sheet.
- Bake in preheated oven until lightly browned and a bit crispy.
- In a large bowl, combine all dressing ingredients. Set aside.
- Once cauliflower is cooked, set aside and let cool slightly.
- Dice eggs, onion and celery.
- In a bowl, combine cauliflower, eggs, onion, celery and dressing.
- Garnish with chopped dill and serve.
