Blueberry Zucchini Bread Recipe | Breakfast Care

Blueberry Zucchini Bread Recipe is perfect for just about any time– breakfast, a snack, or even dessert. 
The flavor combination is incredible. Not only does it hide two cups of zucchini in it, it is bursting with fresh blueberries. Then it gets a lemon glaze on the top. It was such an amazing bread I just couldn’t get enough of it. Have a try just once!

  • 1 cup oat flour
  • 4 eggs
  • 1 pint blueberries
  • 2 cups zucchini, shredded
  • 3/4 cup coconut flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup oil
  • A pinch of salt

  • Preheat oven to 350 degrees.
  • Grease a loaf pan.
  • In a bowl, beat together eggs, oil, vanilla, lemon juice and sugar.
  • Fold in the shredded zucchini.
  • In a separate bowl, add the flours, salt, baking powder, and baking soda.
  • Stir the dried mixture into the egg mixture gently.
  • Fold in the blueberries.
  • Pour the mixture into the prepared loaf pan.
  • Bake until a toothpick comes out clean or for 40-50 minutes.
  • Transfer to the cooling rack.
  • Slice after cool down and serve.
