Blueberry Muffins Recipe | Breakfast Care

Blueberry Muffins are just heavenly. They are soft, fluffy, moist and packed with blueberries. It is a scrumptious treat that is perfect for breakfast or after school snacks, and also makes a festive brunch addition.

  • 2 cups flour
  • 1/2 cup milk
  • 2 eggs
  • cups sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • cups blueberries
  • 1/2 teaspoon salt

  1. Preheat the oven to 375 degrees.
  2. Mix butter and sugar until light. Add the eggs, beating well. 
  3. Add vanilla and mix well.
  4. Add the flour, salt and baking powder . Then add to the creamed mixture alternately with the milk.
  5. Crush 1/2 cup blueberries and mix into the batter. Fold in the remaining whole berries.
  6. Line a standard muffin tin with cupcake liners.
  7. Fill with batter and prinkle the 3 teaspoons sugar over the tops of the muffins, and bake for about 20-25 minutes.
  8. Remove muffins from tin and transfer to the cooling rack.
  9. Enjoy!

If using frozen blueberries, don't crush any of them. Rinse in cold water, then drain with paper towels before using.
