Beetroot & Yoghurt Salad is the healthy and delicious salad to beat the summer heat. It can be used as a side dish with Indian foods or eaten alone.
Ingredients
- 1 cup yoghurt
- 3 beetroots, peeled & boiled
- 1 teaspoon cumin seeds
- 1 clove garlic
- A handful of fresh dill, roughly chopped
- 1 tablespoon pomegranate seeds
- 1 tablespoon oil
- Salt & pepper, as per taste
Instructions
- In a bowl, mix all the ingredients together in a small bowl. Season with salt and pepper accordingly.
- Peel and thinly slice the cooked beetroot into quarters and fry in a pan.
- Arrange the beetroots wedges in an even layer in a serving dish.
- Top with the spoon of yoghurt.
- Garnish with chopped dill and pomegranate seeds, and serve.
- Enjoy!
Note
For best taste and flavour, refrigerate salad for 2 hours before serving..
