Beetroot & Yoghurt Salad Recipe| Breakfast Care

Beetroot & Yoghurt Salad is the healthy and delicious salad to beat the summer heat. It can be used as a side dish with Indian foods or eaten alone.


Ingredients
  • 1 cup yoghurt
  • 3 beetroots, peeled & boiled
  • 1 teaspoon cumin seeds
  • 1 clove garlic 
  • A handful of fresh dill, roughly chopped
  • 1 tablespoon pomegranate seeds
  • 1 tablespoon oil
  • Salt & pepper, as per taste


Instructions
  1. In a bowl, mix all the ingredients together in a small bowl. Season with salt and pepper accordingly.
  2.  Peel and thinly slice the cooked beetroot into quarters and fry in a pan.
  3. Arrange the beetroots wedges in an even layer in a serving dish.
  4. Top with the spoon of yoghurt.
  5. Garnish with chopped dill and pomegranate seeds, and serve.
  6. Enjoy!


Note
For best taste and flavour, refrigerate salad for 2 hours before serving..
