Batata Vada is a popular Maharashtrian cuisine. These are crispy outside, fluffy and airy inside. It is a perfect Indian snack option which is popular not only in Mumbai streets but across India. It is known as Aloo Bonda in South.
Ingredients
For Besan Batter:
- 2 cup besan / gram flour
- 2 tablespoons rice flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 3/4 cup water
- Salt, as per taste
For Batata Vada Mixture:
- 4 potatoes, boiled and mashed
- 1 teaspoon ground cumin
- A pinch of hing
- 2 green chillis, finely chopped
- 2 teaspoon oil
- 1 teaspoon lemon juice
- 4 cloves garlic, finely chopped
- A handful of fresh coriander leaves, chopped
- 1/4 teaspoon turmeric powder
- Salt, as per taste
Instruction
- Heat a pan with oil.
- Add cumin, hing, chilli, garlic cloves and turmeric powder. Saute them well.
- Add boiled and mashed potatoes. Mix well along with salt making sure everything is well mixed.
- Add lemon juice and coriander leaves. Mix well.
- Prepare besan batter by adding besan and rice flour.
- Add turmeric powder, chilli powder, hing, baking soda and salt. Mix them well.
- Add water and whisk until smooth batter is formed.
- Take a small ball sized aloo mixture and flatten slightly.
- Dip in besan batter coating uniformly.
- Heat oil in a pan. Deep fry the balls in hot oil.
- Flip and cook until the batata vada turns golden.
- Drain off over kitchen paper towel.
- Garnish with coriander leaves and serve hot.
