Batata Vada/ Aloo Bonda Recipe | Breakfast Care

Batata Vada is a popular Maharashtrian cuisine. These are crispy outside, fluffy and airy inside. It is a perfect Indian snack option which is popular not only in Mumbai streets but across India. It is known as Aloo Bonda in South.


For Besan Batter:
  • cup  besan / gram flour
  • 2 tablespoons rice flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 3/4 cup water
  • Salt, as per taste
For Batata Vada Mixture:
  • 4 potatoes, boiled and mashed
  • 1 teaspoon ground cumin
  • A pinch of hing
  • 2 green chillisfinely chopped
  • 2 teaspoon oil
  • 1 teaspoon lemon juice
  • cloves garlic, finely chopped
  • A handful of fresh coriander leaves, chopped
  • 1/4 teaspoon turmeric powder
  • Salt, as per taste


  • Heat a pan with oil.
  • Add cumin, hing, chilli, garlic cloves and turmeric powder. Saute them well.
  • Add boiled and mashed potatoes. Mix well along with salt making sure everything is well mixed.
  • Add lemon juice and coriander leaves. Mix well.
  • Prepare besan batter by adding besan and rice flour.
  • Add turmeric powder, chilli powder, hing, baking soda and salt. Mix them well.
  • Add water and whisk until smooth batter is formed.
  • Take a small ball sized aloo mixture and flatten slightly.
  • Dip in besan batter coating uniformly.
  • Heat oil in a pan. Deep fry the balls in hot oil.
  • Flip and cook until the batata vada turns golden.
  • Drain off over kitchen paper towel.
  • Garnish with coriander leaves and serve hot.
  • Enjoy!
