Spinach Haloumi Omelette Recipe | Breakfast Care

Spinach Haloumi Omelette is delicious just about any time of the day or night. This tasty version has protein, flavour and texture with the addition of Haloumi. 

  • 2 large eggs
  • 1 onion, diced
  • 1 tablespoon unsalted butter
  • 4 olives
  • 2 cherry tomatoes, cut in halves
  • Haloumi, cut into cubes
  • Salt and pepper, as per taste


  1.  In a small  bowl, beat  the eggs, salt and pepper , haloumi, baby spinach, tomatoes onion and whisk well.
  2. Heat butter in  omelette pan over medium-high heat. 
  3. Pour the egg mixture into pan. Mixture should set immediately at edges.
  4. Gently push cooked portions from edges toward the center with inverted turner so that uncooked eggs can reach the hot pan surface. Continue cooking, tilting pan and gently moving cooked portions as needed.
  5. Serve hot immediately.
  6. Enjoy! 

Omelettes are best cooked one at a time and served immediately.
