Spinach Artichoke Pinwheels is an popular appetizer.
It is perfect for any party or just as a snack. Loaded with fresh spinach, artichoke, and lots of cheese.
Ingredients
- 2 sheets puff pastry
- 1/2 cup mayonnaise
- 14-ounce can artichoke
- 2 cups baby spinach, chopped
- 3/4 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp oil
- 1/2 tsp salt & pepper
Instructions
- Preheat oven to 400 degrees F.
- In a medium bowl, stir together cream cheese, mayonnaise, garlic, salt, pepper and Parmesan cheese until combined. Fold in spinach and artichokes.
- Roll out 1 sheet of puff pastry. Brush oil over sheet.
- Spread half of the mixture onto sheet, leaving a 1 inch margin on each side.
- Roll up sheet tightly, pinch the seam closed. Wrap in plastic wrap. Repeat with second sheet.
- Place in freezer for 20 minutes, just to firm them up.
- Remove the rolls from freezer and cut into 1 inch thick slices.
- Place pinwheels in parchment lined baking sheet. Bake for about 20-25 minutes or until fluffy and light browned.
- Remove from oven and transfer to the cooling rack and serve.
