Shrimp Fried Rice is a healthier recipe cooked using brown rice. It is a delicious whole grain recipe that’s high in fiber.
Ingredients
- 1 pound medium shrimp, peeled and deveined
- 3 cups cooked rice
- 1 egg, scrambled
- 3 tablespoons soy sauce
- 1/2 teaspoon ginger powder
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- A handful of beet greens
- 2 carrots, peeled and grated
- 1 tablespoon oil
- Salt & Pepper, as per taste
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper.
- Heat oil in a large pan over medium high heat.
- Add shrimp, and cook, stirring occasionally, until pink.
- Season with salt and pepper, as per taste.
- Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent.
- Stir in carrots, stirring constantly until tender.
- Stir in rice, scrambled egg, green onions and soy sauce mixture. Stirring constantly until cooked.
- Serve immediately.
