Roasted Breakfast Potatoes Recipe | Breakfast Care

Roasted Breakfast Potatoes are the best side dish for breakfast and can go with any meal. Red potatoes actually have a number of redeeming qualities. One medium red potato has about one-third of your daily Vitamin C requirement, plus four grams of protein and three grams of fiber.

  • 2 pounds red potatoes, cut into ½ inch cubes
  • 2 tablespoons olive oil
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon paprika
  • 1/4 teaspoon red cayenne pepper
  • ½ teaspoon salt, as per taste
  • Freshly ground black pepper
  • 1 teaspoon coriander/ chives, chopped

1. Preheat oven to 425. Coat large baking sheet with nonstick cooking spray to prevent sticking.
2. Add potatoes to a large bowl, drizzle with 2 tablespoons olive oil, then add the spices such as garlic powder, cumin, coriandr, paprika, ground turmeric, red cayenne pepper, salt and pepper.
3. Use clean hands to toss potatoes to coat the the potatoes in oil and spices. Add potatoes to the baking sheet and spread out evenly.
4. Bake for 20 minutes, then toss potatoes, increase heat to 475 degrees and cook potatoes for another 15-20 minutes until they are golden brown and slightly crisp to your liking.
5. Transfer to a bowl and sprinkle some salt and pepper over the potatoes.
5. Garnish with coriander/ chives before serving.
