Mushroom Toast Wth Fried Eggs Recipe | Breakfast Care

Mushroom toast with fried eggs are a great way to eat more veg for breakfast, brunch or a light lunch.

  • 2 slices bread
  • 2 eggs
  • 3 tablespoons olive oil
  • 1 shallot, chopped
  • 1 clove garlic, chopped
  • 1 pound mushrooms, sliced
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons butter
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

1. In a large pan, heat the oil over medium heat.
2. Add the shallot, garlic, mushrooms, salt, and pepper. Cook, stirring, for 5 minutes, or until the mushrooms release their juices.
3. Turn the heat to medium-high and continue cooking, stirring often, until all the mushroom liquid evaporates.
4. In the pan, melt the butter over medium heat.
5. Drop the eggs into the skillet and sprinkle them lightly with salt and pepper. Cook 1 minute. Cover the pan unti whites are set
6. Transfer to individual plates when done and butter.
7. Spread mushrooms among the bread and top with an egg.
8. Garnish with parsley and serve.
9. Enjoy!

You can add chicken stock to your toast.
