This Mediterranean Chickpea Salad is a bright, colorful and delicious salad with a simple dressing.
Ingredients
- 2 cups chickpeas, rinsed and dried
- 1 cucumber, diced
- 1 cup cherry tomatoes, halves
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tsp fresh parsley, chopped
- 2 tbsp red wine vinegar
- 1/2 tsp olive oil
- 1tsp dried oregano
- Red bell pepper flakes (optional)
- Salt & Pepper , as per taste
Instructions
- In a large mixing bowl, mix together the olive oil, vinegar, oregano and salt.
- To the dressing, add in the chickpeas, cucumbers, olives, onion, and tomatoes. Toss together until everything is well coated and combined.
- Sprinkle red bell pepper flakes and chopped parsley before serving.

You can store leftovers in the refrigerator for up to 3 days.
