Egg Bhurji Recipe | Breakfast Care

Egg bhrurji is the Indian twist to scrambled eggs. It is one of the most loved breakfast and street food of India. a dish originating from the Indian subcontinent. It is usually served with rotis or naan or pav/bread in India.


Ingredients
  • 5 Eggs
  • 1  Green Chili, chopped
  • Onion, chopped
  • 1 tomato, chopped
  • 1/4  tsp turmeric powder
  • tsp coriander powder
  • 1/2 tsp jeera/ground cumin
  • 2 tbsp oil
  • 1/2 tsp salt, as per taste
  • A handful of coriander leaves, chopped

Instructions
  • Break the eggs in a bowl and whisk the eggs well.
  • Heat a pan over medium heat and once it’s hot, add oil and cumin seeds. Saute for about 30 seconds until the cumin seeds change color.
  • Add onion and green chili and saute for about 5-7 minutes until they become golden brown in color.
  • Add tomatoes, spices and mix well. Cover with lid so that the tomatoes soften, for about 2-3 minutes.
  • Add the egg mixture and cook for 1-2 minutes, scrambling the eggs until cooked. Keep stirring continuously until cooked. 
  • Garnish with coriander and service.
  • Enjoy!

Notes
 1. You can have this delicious cooked egg bhrurji with naan, chapati, pav or paratha as well.
2. If using veggies, pre-cook them.
