Coconut Rice recipe is also known as Thengai Sadam. It is one of our favourite South Indian food, easily made at home using fresh coconut.
Ingredients
- 3-4 cups cooked rice
- 1 cup water
- 8-10 raw cashews
- 1-2 green chili, chopped
- 3/4 cup coconut, grated
- Salt, as per taste
- 1.5 tablespoon oil/ghee
Instructions
- Heat oil in a pot on medium heat.
- Place all the ingredients in pot, except cashews and grated coconut and cover the lid. Let it boil.
- Stir occasionally and keep cooking until rice has absorbed water.
- Garnish with sauteed cashews and grated coconut.
- Serve the coconut rice with any curry, yogurt or pickle.
